Hand-cleaning salmon in preparation for salting A view of the slime line at New England Fish company where several people are cleaning large salmon in preparation for the salting. Century - 20 Text from album: MILD CURE SPLITTER AT WORK. Preparing King Salmon for Salting. After the large Red King Salmon have been weighed at Noyes Island they are brought into this shed and here an expert splitter beheads them, then splits the fish along the back-bone, extracting the bone and tail. They are brought to the plant already dressed by the fishermen. The native girls then wash the sides of the fish and they are turned over to the salter. |
